Who this course is for

This is the apex of the ASC HACCP pathway, and it is deliberately demanding. It is for experienced HACCP team leaders, QA and food safety managers who own the food safety management system, and consultants who implement HACCP for clients. If you are the person who has to validate a critical limit, defend a CCP decision, or answer an auditor on hazard analysis, this course is built for you. It assumes you have already completed HACCP for Supervisors and HACCP Teams or hold equivalent experience.

What you will learn: the five modules

Module 1: food safety and the HACCP system

A rigorous reset on food safety and the HACCP system, setting the definitions and framework the rest of the course builds on.

Module 2: understanding food safety hazards in depth

A deep treatment of chemical hazards, natural and synthetic, allergen hazards, and physical hazards, with the sources, risks and control measures for each. This is the hazard knowledge that separates a competent hazard analysis from a superficial one.

Module 3: advanced food microbiology

How microorganisms are identified, the fundamentals of microbial food spoilage, and detailed study of the organisms that matter most, including Pseudomonas, spore-forming bacteria, yeasts and moulds, plus foodborne disease and microbial growth in food systems.

Module 4: food preservation

Why we preserve, the conventional and emerging preservation methods, and how combined methods work together, the science behind shelf life and safe processing decisions.

Module 5: conduct a full hazard analysis

The complete system, applied. You work through all five preliminary steps and then every one of the seven principles: conducting the hazard analysis, determining critical control points, establishing critical limits, monitoring, corrective actions, verification, and documentation and record keeping. This is where you become the person who can build and defend the whole plan.
