Regulation R638
The training an inspector asks about when you apply for or renew a Certificate of Acceptability.
Regulation R638 requires a trained person in charge at every food premises, through accredited training where applicable, trained food handlers, routine assessment of that training, and records that are routinely updated. The three steps take an owner or manager from no training to a certificate an environmental health practitioner can verify.

Is an online R638 certificate accepted for a Certificate of Acceptability?
Regulation R638 does not prescribe online or classroom, but Regulation 10(1)(a) expects the person in charge’s training to be accredited or conducted by an inspector, where applicable, and 10(1)(b) expects staff to be trained by an inspector or another suitable person. The environmental health practitioner judges adequacy. ASC is a SAATCA registered and FoodBev SETA accredited provider; the Persons in Charge course covers the regulation itself, ends in a video-proctored assessment and issues a QR-verified certificate.
Which course should food handlers take?
Basic Food Safety Practices for Food Handlers (6 hours, R899). Very new staff can start with Basic Food Hygiene Awareness (4 hours, R420) and take the full food handler course later.
Which course does the owner or manager of a food premises need?
Food Safety Practices for Persons in Charge of Food Premises (8 hours, R1Β 699). Regulation R638 makes the person in charge responsible for their own training and for everyone working on the premises.
How do I pay, and can my company get an invoice?

How long does a course take and can I do it on my phone?
Courses run from 4 to 24 hours of self-paced learning and work on a phone, tablet or laptop. You can stop and resume at any time, and your certificate downloads the day you pass.
What happens if I fail the assessment?
Each knowledge test allows three attempts with a 70 percent pass mark, and the ASC support team can arrange a reassessment where needed. Contact support from your learner dashboard.
Is ASC Food Safety Training accredited?
Yes. ASC is a SAATCA registered online training course provider (TC 065), a FoodBev SETA accredited training provider (587/00337/1900) and B-BBEE Level 1. Courses are written and led by an HPCSA-registered Environmental Health Practitioner. ASC Food Safety Training is the training arm of ASC Food Safety Consultants, with branches in Gqeberha, Johannesburg and Cape Town.
Who trains the courses?
The courses are led by Mthokozisi Nkosi, ASC’s founder, a food scientist, registered lead auditor and SAATCA R638:2018 Lead Implementer (SAATCA register RG003), and delivered by a team of accredited ASC trainers and assessors. Two of the four R638:2018 implementers on the SAATCA register are ASC trainers: Mthokozisi Nkosi and Onele Kutu (RG004).
