The rule that catches people. The FLW Standard says the reported weight of food
loss and waste must reflect the state in which it was generated, that is, before water was added or
before its own water was taken out. A tomato that left through the drain is reported as tomato at its
own moisture, not as the dried solids you measured. Record every conversion factor you used and where
it came from, because an auditor will ask.
