Reducing Food Loss and Waste for Sustainable Manufacturing
About Course
A measured number is not a reduced one. This course turns your baseline into money found, a policy that survives an audit, and a programme that runs without you standing over it.
You can measure food loss and waste perfectly and still lose exactly as much of it next year, because measuring is not the same job as reducing. This course is the second job: finding the causes worth fixing, costing them properly, writing objectives that pass a Version 7 audit, routing surplus to donation and animal feed without a food safety incident, and putting the number in front of the reporting frameworks that are starting to ask for it.
It runs on the same case study as Courses 1 and 2: a vegetable freezing plant in Tzaneen. Here you turn that plant’s measured baseline into a ranked hotspot list, a business case a finance manager signs, a policy and objectives register an auditor cannot fault, and a donation and animal feed programme with the controls FSSC 22000 clause 2.5.16 b and c actually require. A practical workshop then has you build the funded programme and the management review pack for a line of your own.
For employers and QA managers
- Money found, not just measured. The intervention list and business case built in this course are how a measured baseline turns into a funded reduction target a finance manager signs off on.
- A policy and objectives register an auditor cannot fault. Clause 2.5.16 a asks for a policy, a base year, objectives and a prevention plan. This course builds all four, and the evidence pack an auditor asks for against 2.5.16 a to d.
- Donation and animal feed done safely. The surplus decision route and the controls under 2.5.16 b and c, with traceability that survives a mock recall, so surplus product moves without becoming a food safety incident.
- Written by an auditor. Mthokozisi Nkosi, ASC’s founder and an FSSC 22000 and BRCGS lead auditor, built this course from what he sees on site.
- Teams of five or more: contact us for a team rate and one invoice.

Questions people ask before they enrol
Who is this reducing food loss and waste course for?
QA and technical managers, FSMS implementers and sustainability officers in South African food manufacturing who need to turn a measured figure into a funded reduction programme and an audit ready policy.
Do I need to complete Courses 1 and 2 first?
Course 2, Measuring Food Loss and Waste, is recommended since this course builds directly on a measured baseline, but this course defines its own terms and can stand alone.
How long does it take?
About eight hours in total including the quizzes and the workshop. It works on any phone and you can stop and continue later.
What is the practical workshop?
Two further hands on sittings plus a closing lesson: you turn a baseline into a ranked, costed, root caused intervention list and a complete objectives register, assemble the clause by clause evidence pack and a management review input, then plan the first ninety days of the programme at your own site.
Does this help with FSSC 22000?
Yes. FSSC 22000 additional requirement 2.5.16 is the only GFSI benchmarked scheme requirement that asks a site to reduce food loss and waste, and this course builds the policy, objectives, prevention plan and evidence pack that 2.5.16 a to d actually require, including the donation and animal feed controls under 2.5.16 b and c. BRCGS Food Issue 9 clause 4.12 and 4.13 and SQF clause 11.8 deal with waste handling, which the course also covers.
Is there a certificate?
Yes. Everyone who passes every quiz and the final assessment at 70 percent receives a Certificate of Achievement with a QR code and verification ID that anyone can check online.
What does it cost?
R1195 per learner on the current special, normally R1995. Payment is by card or EFT through PayFast. Enrol five or more and contact ASC for a team rate and one invoice.
