Know what this course covers, how long it takes and what you get at the end.
By the end of this course you will be able to:
- Explain food safety, quality, QA and QC in your own words, and name the four kinds of hazard at your own station.
- Say what food safety and quality culture is, the five things that build it, and where your own team sits on the maturity ladder.
- Answer an auditor, customer or inspector with confidence about your own job.
- Do your own job the right way every shift: your body, your workstation, specifications, allergens and honest records.
- Speak up about a problem through the right channel, and know what protects you when you do.
- Explain what poor food safety costs the consumer, the business, your colleagues and you.
- Complete the records that reach you: the culture questionnaire, the near miss report, the floor walk and the monthly inspection.
Welcome. This course is about food safety and quality culture, which is a long way of saying one thing: what people actually do about food safety when the pressure is on and nobody is watching.
Four modules
Module 1 is the words and the culture. Module 2 is audits. Module 3 is your own job and speaking up. Module 4 is the records you use.
About four hours
You can do it in one sitting or in short pieces. The course remembers where you stopped.
On your phone
Every page works on a phone. You do not need a computer.
A certificate
You get a certificate when you pass the final assessment. Your supervisor then watches you do your job once, within 30 days.
There is nothing in this course you have to learn by heart. You will be asked what you would do in real situations, and why. That is what matters at work and that is what an auditor asks you.
- Download the workbook from the last block on this page and keep it.
- Do the quizzes at the end of each group of lessons. They are timed at 30 to 45 seconds a question and the pass mark is 70 percent. Watch the short videos, they carry the key points.
- Write your own examples in the workbook as you go. You will need them at the end.
- Four modules, about four hours, works on a phone.
- Every quiz needs 70 percent to pass, with three attempts and a different set of questions each time. The final assessment needs 70 percent and you get two attempts. You need to pass every quiz and the final to get your certificate.
- Your supervisor completes one workplace observation within 30 days.
