Who this course is for
This is the entry point to the ASC HACCP pathway. It is built for food handlers and food industry workers, QA and QC technicians who monitor day to day, Persons in Charge who need HACCP awareness under Regulation R638, students in food-related fields, and anyone joining a HACCP or food safety team for the first time. What you will learn: the three modules
Module 1: the structure of a food safety management system
You start with the big picture: how a food safety management system fits together, and what food safety hazards actually are. You learn to recognise the hazards that HACCP exists to control and the corrective procedures that bring a process back under control.
Module 2: microbiology in a food handling environment
Because most food safety hazards are living organisms, you build a working understanding of microbiology: the role of microorganisms in food, how they grow and reproduce, and the good manufacturing practices that keep microbial contamination in check. This is the science that makes every temperature and hygiene rule finally make sense.
Module 3: the HACCP system
Finally you meet HACCP itself: the fundamental prerequisite programmes that must sit beneath it, and how a HACCP plan is developed step by step. You finish able to follow, and contribute to, the work your HACCP team does.
