The laboratory rings at two on a Thursday, and what happens in the next hour decides everything

Listeria spp. detected, assembly belt B3, sampled Monday. Between that call and the end of the shift somebody has to decide whether four batches of chilled ready meals move or stay, which fifteen to thirty sites get sponged tomorrow before anyone is allowed to scrub, and what to tell the production manager standing at the door. Plants that have a written programme do this calmly. Plants that have a sampling list and a laboratory contract improvise, clean first, get a clean star burst that proves only that scrubbing works for a day, and meet the same strain again in March.

South Africa learnt the cost in 2017 and 2018: 1 060 confirmed listeriosis cases and 216 deaths, the largest listeriosis outbreak ever recorded, with the outbreak strain found across the environment of one factory. This course is the programme that finds a resident before the product does. It takes you from the growth table and the organisms, through zoning and the plant walk, the sponge and the broth, the laboratory and the data, to the first hour after a positive and the root cause an auditor accepts. Then it makes you build one: a complete environmental monitoring risk assessment for a case plant or your own, scored on the 5 x 5 matrix in the ASC RA19 structure, marked in minutes, and yours to keep.

An environmental monitoring programme (EMP, or environmental monitoring program in US usage) is the documented, risk based sampling of a food plant’s surfaces and environment, zoned from Zone 1 (food contact) to Zone 4 (outside the processing area), to find pathogens such as Listeria monocytogenes and Salmonella in their harbourage sites before they reach product. FSSC 22000 Version 7 clause 2.5.7, BRCGS Food Safety Issue 9 clause 4.11.8 and Codex CXG 61 Annex I require one; South African Regulation R638 does not, and sets only a cleaning verification limit of 100 viable microorganisms (cfu) per square centimetre on a cleaned food contact surface. This course teaches you to build, run and defend that programme.

The material was written and reviewed by food safety consultants, microbiologists, hygiene managers and auditors who run environmental monitoring programmes on South African and international sites, against the July 2026 revision of the Codex Listeria guideline (CXG 61, Annex I), FSSC 22000 Version 7 clause 2.5.7, BRCGS Food Safety Issue 9 clause 4.11.8, the ISO surface sampling and detection methods, the FDA and FSIS guidance, the 3M Environmental Monitoring Handbook, the FSSC guidance document on environmental monitoring, and Regulation R638. Every figure in the course names its source, so you can quote it when a laboratory, a supplier or an auditor pushes back.

What this course is not

It is not a Listeria awareness course, and it is not a slide deck about swabbing with a quiz at the end. It is not a one organism course either: the wet chilled pathogens, the dry plant survivors, the toxin formers, the spoilage yeasts, the acid loving spore formers of juice and cider, and the moulds that leave aflatoxin behind all get their place, with where each lives in a plant, the foods it takes, and the control that beats it. It expects numbers from you: a probability and a severity on every line, a residual rating that sets a frequency, a swab budget that either fits or is argued for, a broth that matches the sanitiser in each area, a release rule with both halves present, and a root cause that stops at a purchasing or design decision and never at cleaning failure. If you want a wall certificate without building a programme, this is the wrong course.

Can I buy this course from outside South Africa?

Yes. The price is in South African rand and payment settles in rand through PayFast; the page shows indicative equivalents in nine currencies. The method is international: Codex CXG 61 Annex I, FSSC 22000 Version 7, BRCGS Issue 9, ISO 18593, ISO 11290-1, ISO 6579-1, ISO 21528-2 and ISO 4833-1, the FDA 2017 draft guidance and the FSIS 2014 Listeria guideline, and the growth data of the FDA, the New Zealand and Irish food safety authorities. The South African law content, R638 regulation 6(4)(b)(i) on the cleaned surface and R607 of 2018, which made HACCP compulsory for RTE heat treated meat and poultry processors, sits in clearly marked sections and is kept because it is the cleanest worked example of a legal limit on a cleaned surface, 100 viable microorganisms per square centimetre, that most schemes leave open.

Who it is not for

This is an advanced course. It assumes you know what a food contact surface, a kill step and a cleaning schedule are, and that you have seen a laboratory report. It does not teach basic hygiene or HACCP. If you need those, start with the ASC food hygiene and HACCP courses and come back; the nine hours here will then be worth a great deal more.

This course is the pathogen control course of the ASC Food Microbiology series. It sits after Introduction to Food Microbiology, Intermediate Food Microbiology and Advanced Food Microbiology, and it is the one that puts the microbiology onto a floor plan and into a programme.

What you will be able to do after it

  • State the outbreak figures an auditor expects you to know and say exactly what South African law requires of a cleaned surface, and what it does not require, so you can answer the question about a legal EMP without guessing.
  • Quote the elements of a programme that FSSC 22000 Version 7 clause 2.5.7 (a) to (d), BRCGS Issue 9 clause 4.11.8 and Codex CXG 61 Annex I require, and the five triggers that force a review.
  • Read a growth table and say which organisms a product, a chiller, a dry store or a cooling tunnel can support, and for how long.
  • Name the pathogens of wet chilled plants and of dry and ambient plants, where each lives in a factory, the foods it is linked to, and whether you prevent it, eliminate it or control it.
  • Name the spoilage organisms and mycotoxin producers behind the common defects in juice, cider, bakery, dairy, meat and canned foods, and where each comes from in the plant.
  • Tell a visitor from a resident strain from a year of results, and explain with the arithmetic of regrowth why a resident is not a cleaning failure.
  • Zone every surface on a line with the two question rule, walk a plant three times following the water, and mark the vectors and the growth niches on the plan.
  • Choose the pathogen, the index organism and the indicators for a wet plant and for a dry plant, and explain why the routine test is Listeria spp. and not Listeria monocytogenes.
  • Score every site inherent and residual on the 5 x 5 matrix, read the residual band into a frequency, and build a rotation that fits a swab budget or shows management the gap.
  • Specify the sponge, the swab and the neutralising broth for every area against the sanitiser in use, and explain why a Letheen sponge or a neutralising buffer on a peracetic acid line hides positives while Dey Engley (D/E) and HiCap broths do not.
  • Take a sponge sample that will stand up, in ten steps, and train a supervisor to do the same.
  • Get a sample to an accredited laboratory chilled and signed for at every handover, read the schedule of accreditation, and act on a presumptive.
  • Run the cleaning verification programme that satisfies R638 without confusing it with the pathogen programme.
  • Turn a year of results into a baseline, alert, action and escalation levels, a heat map, a hit rate and a repeat site list.
  • Run the first hour after a positive from a printed sequence: log it, map it, decide the product, tell the people who act, star burst in six directions before the intensified clean, hold and test, release on both halves of the rule.
  • Plan a seek and destroy teardown, prove a resident with typed isolates, and write a root cause and CAPA that reaches a design or system cause.

What does the EMP course cover? 6 modules, 25 lessons, 15 narrated videos

Six games, one per module: Whose rule is it?, Name that bug, Name the zone, Which sponge?, The laboratory rings and Gate keeper. Each one puts you on a South African site at the moment somebody has to decide, 45 seconds a decision.

Module 1: Why we monitor: the law, the schemes and the microbiology of niches

  • Polokwane, and what it changed in South African law
  • What the standards actually ask for: FSSC 22000 V7, BRCGS Issue 9, Codex CXG 61 Annex I
  • Listeria and Salmonella: how they live in a factory
  • Transient contamination versus the resident strain: niches, harbourage and biofilm

The module settles the argument most plants are still having: South African law sets one limit on a cleaned surface and says nothing about pathogens in the environment; the duty to look for them comes from the schemes, your own hazard analysis and Codex. It ends with the idea that carries the course: a resident strain is arithmetic, not negligence.

Module 2: The organisms: pathogens, spoilage organisms, toxins and where they live

  • Reading the growth table: temperature, water activity, acidity, salt and oxygen, and how long you have
  • The pathogens of wet and chilled plants
  • The pathogens of dry and ambient plants, and the toxin formers
  • Spoilage organisms and mycotoxins: what decides shelf life, and which foods each one takes
  • Prevent, eliminate, control: kill steps, hurdles, zoning, chemistry and biofilm

Five lessons that most environmental monitoring training skips. Listeria monocytogenes, Yersinia, the non proteolytic Clostridium botulinum of the vacuum pack and the shiga toxin E. coli in the wet chilled plant; Salmonella and Cronobacter surviving dry for months, and Bacillus cereus, Staphylococcus aureus and Clostridium perfringens making toxin in the hours a product sits warm; Alicyclobacillus and the preservative resistant yeasts of juice and cider; the moulds of bread, grain and nuts and the aflatoxin that survives cooking. Each with its foods, its place in the plant and its control, and a game, Name that bug, to fix them.

Module 3: Zoning and mapping the plant

Module 4: Taking the sample: swabs, technique and the laboratory

The trend record clause 2.5.7 (c) asks for, the first hour and the ten days after a positive, the star burst in six directions, the teardown that finds the niche upstream of the positive, the five whys to a purchasing or design cause, and the annual review with its five triggers. Module 6: The practical workshop: building the environmental monitoring risk assessment

Can I do the course without a factory? The three case sites

Every case pack, activity and the assignment run on a provided case site, so a delegate between jobs, studying, consulting or working off site can complete the whole course. Three sites carry the work:

  • Mzansi Fresh Meals, chilled ready meals in Gauteng. 400 people on two shifts, a 12 day shelf life, a high care assembly hall at 4 degrees Celsius, twenty four sites from the walk with their swab history, a belt with a positive eight months ago, a drain with three, and a swab budget of 25 a week. This is the main site.
  • Sundays River Citrus Packhouse in the Eastern Cape. Wet dump tank, brush beds, chlorine and packhouse drains, with a new juice room, so Alicyclobacillus, the preservative resistant yeasts and the moulds get their turn.
  • Umhlanga Kitchens in KwaZulu-Natal. A central production kitchen supplying sixteen restaurants with chilled cooked components on a 5 day shelf life: a slicer that is not dismantled nightly, vacuum packed smoked fish, and a cracked floor around a drain.

The cases are training scenarios built from patterns that real investigations and audits keep finding. No company is named in any of them.

Which standards does the course teach against?

Every rule in the course is tied to the document it comes from. When a laboratory, a supplier or an auditor asks where a number came from, you show them the clause.

How is the course assessed?

  • Six knowledge checks, one per module: 15 questions drawn at random from a bank of 25, so no two papers are the same. Thirty seconds a question, 70 percent to pass, three attempts.
  • Six games, one per module: 12 scenarios, 45 seconds a decision, 70 percent, three attempts.
  • A final assessment of 30 questions drawn from a bank of 78, so every attempt is different. Thirty seconds a question, 70 percent to pass, three attempts, video proctored on any phone or laptop camera, with copy and paste blocked.
  • One marked assignment, out of 100 with a pass mark of 70: your environmental monitoring risk assessment built in the EMP Programme Builder, plus a note of 150 to 250 words to your management naming the top three actions with a rand figure, a date and an owner. It is marked automatically against seven printed criteria and printed rules, in minutes, and the feedback names what fell short and which lesson to go back to. Three attempts.

The question bank behind all of this runs to 300 questions written against the lessons and verified twice. Every failed attempt returns feedback, so the second attempt is a better one and not a re roll. The work must be yours: a submission with no site detail is returned unmarked, and a second one is suspended for a review by ASC.

Frequently asked questions about the EMP course

Is an environmental monitoring programme a legal requirement in South Africa?

No. Regulation R638 sets one limit, 100 viable microorganisms per square centimetre on a cleaned food contact surface, and says nothing about pathogens in the environment. The duty to look for Listeria comes from FSSC 22000 Version 7 clause 2.5.7, BRCGS Issue 9 clause 4.11.8, your own hazard analysis and the Codex guideline. The course teaches you to answer that question in an audit without guessing.

Is it only about Listeria?

No. Module 2 covers the wet chilled pathogens, the dry plant survivors Salmonella and Cronobacter, the toxin formers Bacillus cereus, Staphylococcus aureus and Clostridium perfringens, the spoilage yeasts and Alicyclobacillus of juices and ciders, and the moulds and aflatoxins of grain, nuts and spices, each with its environment, its foods and its control. Listeria spp. is the index organism of a wet chilled plant, which is why it carries the routine programme.

Do I need to be working at a factory?

No. Every case pack, the activities, the workshop and the assignment run on the three provided case sites with full data, so you can complete the course without access to a plant. If you are on a site, you do the same tasks on your own plant and walk out with a risk assessment for it.

Is Listeria testing on surfaces a legal requirement in South Africa?

No. R638 regulation 6 sets a limit of 100 viable microorganisms per square centimetre on a cleaned food contact surface and does not mention Listeria. Listeria environmental monitoring is required by FSSC 22000 Version 7 clause 2.5.7, BRCGS Issue 9 clause 4.11.8 and Codex CXG 61 Annex I.

What is the difference between an environmental monitoring swab and a cleaning verification swab?

A cleaning verification swab counts total viable microorganisms on a cleaned surface against the R638 limit. An environmental monitoring swab looks for a named organism, usually Listeria spp., about three hours into production, to find harbourage sites. The course keeps them in separate programmes with separate records.

What is the generated risk assessment?

Is the assignment really marked automatically?

Yes. The builder will not let you submit until its review gate is clear, and the submission is marked against seven printed criteria and printed rules within minutes, with feedback that names what fell short and the lesson to go back to. It checks counts, scores, schedule, broths, levels, the star burst, the root cause against a list of rejected symptoms, owners and dates, and the note; it does not read for meaning. A submission that reads as generic, with no site detail and no case data, is returned unmarked; a second one is suspended for a review by ASC, the one human step in the course.

Is this course accredited?

ASC Food Safety Consultants is a training provider whose courses carry HPCSA CPD accreditation. The course is built on Codex CXG 61, FSSC 22000, BRCGS, the ISO methods and South African law, but it is not approved or endorsed by any scheme owner, and we do not claim that it is.

I am outside South Africa. Will it apply to my plant?

Yes. The Codex guideline, the scheme clauses, the ISO methods and the FDA and FSIS patterns are international, and the builder and the workbook are written against them. The South African regulation is one marked section. You pay in rand; the page shows indicative equivalents in nine currencies.

How long does it take and how long do I have?

About nine hours of lessons, videos, activities and assessments, self paced. Most delegates finish in two to three weeks, doing the workshop in three sittings of about an hour each. Your access does not expire, so you can go back into the lessons, the builder and the toolkit whenever the plant changes. If your company needs a set access period stated on a purchase order, ask ASC before you enrol and it will be confirmed in writing.

What happens after I pay?

Will it help with my FSSC, BRCGS, IFS or SQF audit?

It teaches the environmental monitoring requirements directly, FSSC 22000 Version 7 clause 2.5.7 (a) to (d) and BRCGS Issue 9 clause 4.11.8, and the Codex guideline they point to, and the risk assessment you generate is written in the structure auditors are used to seeing. It is not a clause by clause course on one scheme, so read your own standard alongside it.
