Step 1. The site and the assessor
No site of your own? Load Mzansi Fresh Produce, the course case study. It fills the site details, the scores and evidence from the 13 October 2026 assessment, the seven objectives and the six surplus streams. The owners, dates, interim actions and hierarchy decisions are left for you, because those are the work.

The topics marked T are the FLW-specific requirements that sit after 8.1 in ISO 20001 and run through the other clauses. Check their exact numbers and wording in your copy of the standard.

Every item scored 0 or 1 is a gap. Give each one an owner, a target date and the action that closes it. Every item scored 0 also needs an interim action: what the site does now, until the gap is closed.
Step 6. Objectives and surplus streams

Each objective needs a baseline value, a target value, a unit and a date. Write the values, not only the percentage.
