How to use them
Three passes, in this order
Start with the R638 readiness checklist and walk the premises with it: structure, hand-wash facilities, storage temperatures, protective clothing and records, in the order Regulations 3 to 11 set them out. Fix what fails, then run the staff training readiness checklist, because the inspector checks the person in charge and the food handlers' certificates before anything else. Keep the daily production hygiene checklist running every shift from then on: it is one of the compliance records Regulation 10(16) asks for, and it is the evidence that the premises stays the way the inspector saw it.

Questions people ask about the checklists
Are these checklists enough to pass an R638 inspection?
They cover every point the environmental health practitioner checks, each with its regulation number, so nothing is missed. They are a working aid: the inspector applies the regulation and their own judgement, and the Certificate of Acceptability is issued by the municipality after the inspection, not by any checklist or course.
Can I print a checklist and keep it as a record?
Yes. Each checklist has a print button that prints only that list. The daily production hygiene checklist is designed to be filed every shift; the training matrix and schedule are meant to be copied into your own documents and kept with your training records.
What training goes with the checklists?
The person in charge of a food premises takes Food Safety Practices for Persons in Charge of Food Premises (Regulation 10(1)(a)) and every food handler takes Basic Food Safety Practices for Food Handlers (10(1)(b)). Both are online, self-paced and carry a QR code the inspector can scan. The course pathways page gives the full path for each job.
