About Course
Most allergen recalls do not start with a dirty machine. They start with a label: a compound ingredient nobody unpacked, an artwork version that was never withdrawn, a recipe change that reached production three weeks before it reached the packaging store.
This course covers that half of allergen management, and it is the half with the least training available anywhere. It works through declaring allergens inside compound ingredients, derivatives and additives; reading a supplier specification for what it is not telling you; deciding a precautionary statement on evidence rather than on nerves, including the action level arithmetic behind it; running an artwork change from recipe to line clearance without leaving obsolete packaging reachable; and building a declaration that holds across several export markets.
It is written for people who already work in food and now own the label.
