About Course

Food that leaves your dock safe can arrive unsafe. This intermediate course is for warehouse, dispatch, transport, cold store and QA people who keep food safe and legal between the factory and the customer in South Africa.

You work through a full distribution centre case, Mzansi Fresh Meals in Pinetown, from the cold room to the customer: cold chain management, dry goods, frozen, chilled and hot food distribution, inland versus coastal climate risks, storage facilities and stacking, vehicles, and health and safety.

What you will be able to do

  • Apply R638 storage and transport rules, including Annexure E temperatures, the 2 °C surface rule and Annexure G probing
  • Run a cold chain that holds from dispatch to delivery, and handle an excursion or power failure properly
  • Store and move dry goods without moisture, mould, pests or taint
  • Choose the right vehicle and load it for airflow and security
  • Plan for the coast and the Highveld: humidity, condensation, altitude, frost and heat
  • Meet GSR 8 stacking, forklift, cold stress and road traffic duties
  • Build a storage and distribution risk assessment for your own site or a case study

27 lessons, 8 knowledge checks, 8 games, 14 diagrams, a practical workshop and assignment, and a final assessment. About 11 hours, on any phone. 70% to pass every assessment, three attempts each.

Course Content

Module 1: Storage and distribution: the risks and the law
Where storage and distribution sit in the food chain, what goes wrong between the factory door and the customer’s dock, and which South African laws and voluntary standards apply to it.

  • 1.1 Where storage and distribution sit in the food chain
  • 1.2 Hazards and risks in storage and distribution
  • 1.3 The legal map: laws, specifications and standards
  • M1 Knowledge check: Storage and distribution: the risks and the law
  • M1 Game: Law, standard or myth?

Module 2: Cold chain management
How the cold chain works and where it breaks, the legal temperature limits in R638 Annexure E, how to measure and record food temperature properly, and what to do when temperature control fails.

Module 3: Distributing dry goods
Dry goods look forgiving, but damp, pests, taint and damage cause most of the losses and complaints in an ambient store. Most of it can be stopped at the receiving door, in the racking or on the back of the truck.

Module 4: Distributing temperature-sensitive food: frozen, chilled and hot
Frozen, chilled and hot food each fail in a different way on the road. For each one you get the risks, the packaging, the vehicle, how to load it and what to check at dispatch and on receipt.

Module 5: Inland versus coastal: climate, humidity and temperature
The same product, truck and procedure behave differently in Pinetown and in Midrand. Humid coastal air and the high, dry, hot or freezing interior each do their own damage to food, packaging, vehicles and buildings, and your stores, docks and routes have to cope with both.

Module 6: Storage facilities, storage requirements and stacking
What a food store must have under R638, how to lay it out and run it from day to day, and how to stack and rack stock so nothing gets crushed or falls. The examples come from the Mzansi Fresh Meals distribution centre in Pinetown.

Module 7: Distribution vehicles
Choosing the right vehicle for each product, keeping it clean, inspected and pre-cooled, and loading it so cold air reaches every carton and the load stays on the vehicle.

Module 8: Health and safety in storage and distribution
Keeping people safe in the warehouse, the cold store, on the dock and on the road, using the OHS Act and its regulations alongside the food safety controls you already run.

Module 9: Practical workshop and final assessment
Put the whole course to work: build a storage and distribution risk assessment for a real or case study site, score it, link it to the law and turn it into actions your manager will sign off.
