Which courses does a food safety officer need?
A food safety officer in South Africa needs 8 online courses, in this order: Food Safety Practices for Persons in Charge of Food Premises, Implementation of Good Manufacturing Practices, Introduction to HACCP, HACCP for Supervisors and HACCP Teams, then 4 more. It takes about 102 hours of self-paced study. ASC is SAATCA registered (TC 065) and FoodBev SETA accredited (587/00337/1900).
In what order should food safety officers take these courses, and why?
A food safety officer answers for R638 hygiene, the HACCP plan, allergen control, supplier approval and the audit file at once, and the path follows that job. Food Safety Practices for Persons in Charge of Food Premises covers the regulation the inspector uses. Implementation of Good Manufacturing Practices and the two HACCP courses build the system the officer runs every day. Allergen Management in Food Supply Chain and Food Fraud (VACCP) and Food Defence (TACCP) cover the two hazards that most often cause recalls and failed audits. Food Safety Inspections and Audit Readiness and Internal and Supplier Auditing Practices come last, so the officer finds the gaps before a certification body does. 8 courses, 102 hours, all online and self-paced, with a QR verified certificate for each.
How long does the food safety officer path take, and what does it cost?
The 8 core courses take about 102 hours of self-paced study and cost R15 823 bought one by one. At 5 hours a week that is about 21 weeks, on a phone or a laptop.
That is about R1 978 a course. Set it against what it protects: a failed audit, a lost customer or a product recall costs a business far more than any course on this page.
Hours and prices are read from each course page. Last checked 11 October 2026.

Questions food safety officers ask before they enrol
Do I need Introduction to HACCP before HACCP for Supervisors?
The path puts Introduction to HACCP first because HACCP for Supervisors and HACCP Teams assumes you know the seven principles and the hazard analysis terms. Introduction to HACCP is 8 hours and R1 195; HACCP for Supervisors and HACCP Teams is 16 hours and R2 730. If you already hold a HACCP certificate and can read your site's plan, you can start at the supervisor level and save 8 hours and R1 195.
Does the Persons in Charge course get me the Certificate of Acceptability?
No. The municipality issues the Certificate of Acceptability after an environmental health practitioner inspects the premises; ASC does not issue it. What Food Safety Practices for Persons in Charge of Food Premises gives you is the training evidence Regulation 10(1)(a) of R638 of 2018 asks of the person in charge, in 16 hours for R1 699, on a certificate with a QR code the inspector can verify. Food handler training under 10(1)(b) is a separate requirement for the staff.
Food safety officer or QA manager: which training path is right?
Take the food safety officer path if you run day-to-day food safety on one site and prepare it for inspections and audits: eight courses, 102 hours, R15 823 bought one by one. Take the QA manager path if you own the certification audit and answer to the customer. It adds Advanced HACCP System Implementation, the scheme courses for FSSC 22000, BRCGS or ISO 22000, Root Cause Analysis One-Day, the culture course and Labelling Claims and Regulatory Framework, and drops Persons in Charge, Introduction to HACCP and Food Safety Inspections and Audit Readiness.
