Which courses does a production operator need?
A production operator in South Africa needs 4 online courses, in this order: Basic Food Safety Practices for Food Handlers, Good Manufacturing Practices (GMP) for Food Handlers, Allergen Awareness for Food Handlers and Food Safety and Quality Culture for Food Handlers. It takes about 23 hours of self-paced study. ASC is SAATCA registered (TC 065) and FoodBev SETA accredited (587/00337/1900).
In what order should production operators take these courses, and why?
Line staff need the basics first, and Food Handlers covers hygiene and contamination. GMP for Food Handlers then puts those habits into a factory: hand wash stations, protective clothing, foreign bodies and line clearance. Allergen Awareness covers cross contact on shared lines. The culture course comes last, because FSSC 22000 and BRCGS auditors now ask operators what they would do and why. The Food Handler Courses Bundle covers the first two for less.
How long does the production operator path take, and what does it cost?
The 4 core courses take about 23 hours of self-paced study and cost R3 344 bought one by one. At 5 hours a week that is about 5 weeks, on a phone or a laptop.
That is about R836 a course. Set it against what it protects: a failed audit, a lost customer or a product recall costs a business far more than any course on this page.
Hours and prices are read from each course page. Last checked 11 October 2026.

Questions production operators ask before they enrol
Do production operators need a food safety certificate in South Africa?
Yes. Regulation R638 of 2018, regulation 10(1)(b), makes the person in charge responsible for making sure every food handler is trained, and line staff in a food factory are food handlers. Basic Food Safety Practices for Food Handlers, 6 hours and R899, is the course that meets that duty. The certificate carries a QR code, so an inspector or auditor can verify it on the spot. The other three courses in this path go beyond the legal minimum.
Can factory workers do these courses on a phone during shifts?
Yes. All 4 courses are online and self-paced, so an operator can work through them on a phone in the canteen or at home, with lifetime access. The whole path is 23 hours: 6 hours for Basic Food Safety Practices for Food Handlers, 8 for Good Manufacturing Practices (GMP) for Food Handlers, 5 for Allergen Awareness for Food Handlers and 4 for Food Safety and Quality Culture for Food Handlers. Each assessment needs 70%, with three attempts.
Can I skip GMP for Food Handlers if I hold Food Handlers?
No, they cover different ground. Basic Food Safety Practices for Food Handlers is about personal hygiene and contamination, and applies in any food business. Good Manufacturing Practices (GMP) for Food Handlers applies those habits to a factory floor and its controls. A production operator needs both, which is why the Food Handler Courses Bundle sells the two together for less than the R2 094 they cost separately.
