Most allergen incidents are not caused by a failure of science. They are caused by a scoop in the wrong bin, a glove that was not changed, a hot hose used first, or a tub with no label on it. This course is written for the people who make those decisions twenty times a shift.
It covers what a food allergy actually is and why a crumb can be enough, the eight allergen groups that must be declared in South Africa, where allergens hide in everyday ingredients, and the four ways they move from one food into another. Then it covers the practical controls: hands, gloves and clothing; scoops, colours and storage; cleaning in the right order; rework and waste; labels and line clearance; and what to do the moment something goes wrong.
No scientific background is needed. Every lesson is short, in plain language, and ends with a check you can answer from what you have just read.
