Implement FSSC 22000 Version 7 properly, once, with the tools to prove it

Most FSSC 22000 training tells you what the Scheme says. This course takes you through building the system it asks for. You work through ISO 22000:2018, the common prerequisite programme requirements of ISO 22002-100:2025, the food manufacturing requirements of ISO 22002-1:2025 and all eighteen Version 7.0 additional requirements, and at every stage you build the documented information rather than read about it.

Version 7.0 was published in May 2026 and it moved a great deal. The prerequisite programme standards were restructured, a common Part 100 now sits underneath every sector part, the scope structure was overhauled, and the grading of findings changed. Every lesson and every video in this course was recorded against Version 7.0. Nothing here is a Version 6 lesson with a new label.

What is in it

Eighty five lessons across eight modules, twenty four hours of structured work. Module 1 covers the Scheme, how certification actually runs, and what changed at Version 7.0. Module 2 implements ISO 22000:2018 clause by clause with the operational clauses worked in depth. Module 3 covers prerequisite programmes and ISO 22002-100:2025. Module 4 works through the additional requirements 2.5.1 to 2.5.18, including which food chain categories each one applies to, which is the detail that catches people out.

Module 5 is your sector elective at implementation depth, food manufacturing with ISO 22002-1:2025, with the other six sector parts covered at awareness level so you can speak to any of them. Module 6 is the toolkit. Module 7 is two practical exercises. Module 8 is the assessment.

Four tools, not four templates

The risk assessment engine runs twelve registers on a five by five matrix with automatic scoring, banding, review gates and an action tracker, and exports to a workbook laid out the way an auditor expects. The hazard analysis tool walks ISO 22000:2018 clause 8.5 in order, from product description through to a hazard control plan, and it will not let you export until every significant hazard has a control measure, every critical control point has a measurable critical limit, and every limit has the rationale that clause 8.5.4.2 requires. The gap assessment tool holds one hundred and seventy seven requirements, asks for your food chain category, shows you only what applies to you, and gives you a prioritised plan. The PRP audit walk puts you in a plant with planted defects and asks you to find them and cite the clause.

Two exercises that behave like an audit

You audit a real looking management review with twelve planted failures, cite the requirement for each and grade it a minor, a major or a critical nonconformity, the three grades Version 7.0 Part 3 allows. Three items in that record look like failures and are not, so you have to read the requirement before you raise a finding. Then you walk a plant on video and do the same thing.

The assessment is automated and it is not a memory test

One hundred and fifty questions in four parts. Parts 1 to 3 test the requirements, and several of the Version 7 questions test applicability rather than recall. Part 4 is six case studies, thirty questions, double marks: a cooling failure where you decide disposition, an allergen mis-declaration that reached a consumer, a supplier failure and an emergency purchase, three audit findings you have to grade, a management review with inputs missing, and an environmental monitoring trend. Every question is marked automatically and every answer carries an explanation naming the requirement that settles it, so a wrong answer teaches you something.

Who it is for

Food safety managers and FSMS coordinators implementing or maintaining Version 7.0, internal auditors who need to audit against it, and consultants who need to implement it for clients. You need a working knowledge of food safety in a manufacturing environment. You do not need prior FSSC experience.

With the matching implementation toolkit, the full set of procedures, forms and risk assessment workbooks built on ISO 22002-1:2025 and the Version 7.0 additional requirements, it is R12,950. The toolkit is the same document set the lessons refer to by number, so a document mentioned in a lesson is a file you already have.
