Which courses does a food buyer or supplier approval manager need?
A buyer in South Africa needs 4 online courses, in this order: Food Fraud (VACCP) and Food Defence (TACCP), Food Fraud Coordinator: VACCP, the Schemes and the Prevention Plan, Allergen Management in Food Supply Chain and Internal and Supplier Auditing Practices based on FSMS. It takes about 45 hours of self-paced study. ASC is SAATCA registered (TC 065) and FoodBev SETA accredited (587/00337/1900).
In what order should buyers take these courses, and why?
Most food fraud enters through suppliers, so the buyer is the first control. Food Fraud and Food Defence explains the difference between VACCP and TACCP, which the coordinator course assumes you know. Food Fraud Coordinator then teaches you to score raw material vulnerability and build the prevention plan. Allergen Management in the Food Supply Chain covers supplier allergen status, and Internal and Supplier Auditing teaches you to audit a supplier yourself. Labelling is optional, for buyers who approve finished product specifications.

Questions buyers ask before they enrol
Can I go straight to the coordinator course if I already run a VACCP?
Yes. Food Fraud (VACCP) and Food Defence (TACCP), 6 hours at R1 450, explains the difference between VACCP and TACCP, and Food Fraud Coordinator: VACCP, the Schemes and the Prevention Plan, 8 hours at R1 750, assumes you already know it. Together they are 14 hours. Doing the coordinator course first means learning the vocabulary and the scoring method at the same time, which slows both down.
Can a buyer audit suppliers without an auditing qualification?
Internal and Supplier Auditing Practices based on FSMS, 24 hours at R3 650, teaches you to plan, run and write up a supplier audit yourself. It is the longest course in the buyer path and the one that turns supplier approval from a paper exercise into a visit with findings. It is online and self-paced, with lifetime access, so it can be done between supplier visits.
Which path if I am between buyer and labelling specialist?
Start with the buyer path, 45 hours over 4 courses, and add the optional Labelling Claims and Regulatory Framework, 8 hours at R1 750, which is marked for buyers who approve finished product specifications. If you also sign off artwork and claims, move to the labelling specialist path, which adds Essentials of Food Labelling Claims for Food Manufacturing, Allergen Labelling and Artwork Control and Advanced Food and Beverage Labelling.
