You sell it, buy it, market it or explain it. This course gives you the science behind the food, in plain language.

Marketing wants to say “preservative-free”. A supplier offers a cheaper breadcrumb. A journalist asks whether an additive is safe. A customer finds something in a pack. Each of these lands on someone without a science degree, and each one goes better when that person understands what the technical team is worried about and why.

Food Science for Non-Scientists is an 8-hour online course for people who work with food but not in a laboratory: sales, marketing, procurement, finance, HR, customer care, chefs, entrepreneurs, journalists and policy staff. There are no formulas to learn. Every idea is explained with everyday examples and tied back to decisions you make at work.

What the course covers

Six modules: what food scientists do and how to read a specification; what is really in our food, from nutrients to additives and the debate about ultra-processed food; why food goes off and why some of it makes people sick; nutrition labels, health claims and allergens; food safety and quality systems such as HACCP and GFSI certification; and how to judge a food science claim in a headline or a sales pitch.

Each module closes with a case study, a knowledge check and a game: rescue a recall before the bagels reach the shelf, decide whether a “preservative-free” pitch can go ahead, and separate food myths from facts against the clock. Every lesson has a Listen to this lesson option. All activities, knowledge checks and games are compulsory and open in order.

The course ends with a capstone project and a proctored final assessment: 40 questions drawn at random, so every attempt is different. 60 minutes, 70 percent to pass, 3 attempts.

Your certificate

Pass the final assessment and you receive an ASC Food Safety Certificate of Achievement for Food Science for Non-Scientists. It shows your name, the course, the completion date and a unique verification ID with a QR code, so an employer or auditor can check it online at ascfoodsafetytraining.com. You can download it from your dashboard as soon as you pass.

The course was developed by ASC Food Safety’s multidisciplinary team of industry professionals, led by Mthokozisi Nkosi, with contributions from specialists in brewing, dairy processing, meat processing and nutrition. It follows international references: Codex Alimentarius, ISO 22000 and WHO and FAO guidance.

  • Describe HACCP, certification and food safety culture, and play your part when something goes wrong
  • Evaluate food headlines and myths critically and collaborate effectively with technical colleagues

The difference between spoilage and food poisoning, the pathogens that make the headlines, and how shelf life, date marks and recalls really work.

Module 4: Nutrition, Labels and Claims
How to read a nutrition panel and front-of-pack labels, what claims are allowed and why, and why a missing allergen declaration is so serious.

Module 5: Food Safety and Quality Systems for Everyone
HACCP without the jargon, what certification and audits really prove, food safety culture, and how to handle a customer who finds something in their food.

Module 6: Thinking Like a Scientist
How science works, how to read a study or headline critically, why food myths persist, how to work well with technical colleagues and what trends lie ahead.
