Why does bread go mouldy in a few days while honey keeps for years? Food science answers questions like this, and it sits behind every safe, consistent food product.

Every decision in a food business rests on science, whether anyone notices it or not. How long a pot of rice is left to cool, the pH of a sauce, the temperature of a cold room and the date printed on a pack are all choices about chemistry and microbes. People who understand why those choices matter make fewer mistakes, and they can explain their decisions to auditors, customers and colleagues.

Introduction to Food Science is a 16-hour online course for school leavers, first-year students, career changers, new staff in food businesses and anyone who wants to know what really happens to food. It assumes school-level science and nothing more. Every technical term is explained the first time it appears, and the examples come from ordinary kitchens, shops and factories.

What the course covers

Seven modules: what food science is and how foods are classified; the chemistry of water, carbohydrates, proteins, fats, vitamins and pH; browning, rancidity, enzymes, emulsions and gels; food microbiology and what microbes need to grow; nutrition and health; taste, smell, texture, food quality and additives; and how food is preserved and kept safe, from the WHO Five Keys to HACCP, Codex and reading a food label.

Each module opens with its learning outcomes and closes with a case study or kitchen experiment, a knowledge check and a game. You will sort a supermarket shelf by how quickly each food spoils, decide what to do with a pot of rice at a party buffet, and track a cheese sandwich from cow and wheat field to lunch box. Every lesson has a Listen to this lesson option. All activities, knowledge checks and games are compulsory and open in order.

The course ends with a capstone project and a proctored final assessment: 40 questions drawn at random, so every attempt is different. 60 minutes, 70 percent to pass, 3 attempts.

Your certificate

Pass the final assessment and you receive an ASC Food Safety Certificate of Achievement for Introduction to Food Science. It shows your name, the course, the completion date and a unique verification ID with a QR code, so an employer or auditor can check it online at ascfoodsafetytraining.com. You can download it from your dashboard as soon as you pass.

The course was developed by ASC Food Safety’s multidisciplinary team of industry professionals, led by Mthokozisi Nkosi, with contributions from specialists in brewing, dairy processing, meat processing and nutrition. It follows international references: Codex Alimentarius, ISO 22000 and WHO and FAO guidance.

What Will You Learn?

  • Explain what food science is, how it developed and the careers it offers across the food chain
  • Classify foods by origin, perishability and acidity, and explain why pH 4.6 and water activity matter for safety
  • Describe the main food components and the key reactions that change them, including browning, oxidation and enzyme action
  • Identify the main groups of food microbes, the conditions they need to grow, and the difference between spoilage, pathogens and fermentation
  • Calculate the energy in a food from its macronutrients and evaluate a meal against dietary guidelines
  • Apply simple sensory tests and explain what food quality means and why additives are used
  • Apply the principles of preservation, the WHO Five Keys and basic HACCP thinking to everyday food safety decisions

Module 2: The Chemistry of Food
Explore water and water activity, the big building blocks of food, and the vitamins, minerals, pigments and acids that shape its nutrition, colour and safety.

Module 3: Food Reactions: Browning, Oxidation and Enzymes
Find out why toast browns, cut apples darken and oils turn rancid, how enzymes help and hinder, and how emulsions, foams and gels create everyday textures.

Module 4: Food Microbiology Basics
Meet the bacteria, yeasts, moulds and viruses that matter in food, learn what they need to grow using FAT TOM, and see how microbes can spoil, sicken or ferment.

Module 5: Nutrition and Health Essentials
Learn how macronutrients supply energy, what vitamins and minerals do, how digestion and fibre work, and how processing and dietary guidelines shape a healthy diet.

Module 6: Sensory Science and Food Quality
Discover how taste, aroma and the trigeminal sense build flavour, how texture and colour are judged and measured, and what quality and food additives really mean.

Module 7: Keeping Food Safe and Preserved
Bring it all together: the principles of preservation, the four types of food hazard, the WHO Five Keys, an introduction to HACCP and Codex, and how to read a food label.
