Why a QA manager needs all three courses
The QA or technical manager signs off both the food fraud vulnerability assessment and the food defence plan, and answers for them at audit. Even when procurement or security builds the assessments, the QA manager must be able to challenge the scores and defend the residual ratings.
The competence requirement is specific. FSSC 22000 Version 7 clause 2.5.4 (a) requires the food fraud assessment and plan to be developed by personnel with appropriate knowledge and competence. GFSI Benchmarking Requirements 2024 (FSM 8.5) set the same expectation. Neither names a course, so a method-specific training record is the clearest evidence you can put in the file.
